    Is there a recipe for an omelette that is simple, quick, and tastes great? I've got you covered! This egg omelette with grated cheese is an absolute hit in our house, my family loves it for breakfast. Its secret lies in the addition of breadcrumbs and cold water, making it wonderfully fluffy.

    Fluffy Cheese Omelette

    The recipe comes from the Czech Republic, where you can find this type of omelette in local cafes, served for breakfast or brunch.

    To prepare the omelette, you need a non-stick pan with a diameter of 8 inches (20 cm) and a nifty flat spatula. If you follow the recipe carefully, I guarantee that you will conjure up a delicious dish in a flash.

    MY TIP: Czech oblozeny chlebicek, an open-faced sandwich is also worth trying!

    To make a fluffy cheese omelette, you will need:

    • Eggs
    • Cheese; grated. Choose a fattier type, with around 40-45% fat content. We need the cheese to melt when frying. Low-fat cheese doesn't melt as quickly; it sticks together and is firmer. An omelette made with such cheese will be chewy, not soft. I usually use cheddar, which works flawlessly in this recipe.
    • Breadcrumbs; plain without seasoning
    • Water; cold
    • Salt
    • Lard; for frying, or vegetable oil such as sunflower or canola.

    To garnish the omelette, prepare vegetables you like or that you have available at home.

    Quick instructions:

    1. Whisk the eggs in a shallow dish with water, breadcrumbs, and salt.
    2. Melt the lard in a frying pan and pour in the omelette mixture.
    3. Sprinkle the grated cheese over the top.
    4. Over medium heat, fry until the cheese melts.
    5. Slide the egg omelette onto a plate and fold it in half.
    6. Then garnish with vegetables and serve.

    STEP 1: Crack the eggs into a shallow dish. Pour in the water, add the breadcrumbs and salt. By hand, using a fork, beat well until fully combined. Be patient; there should be no lumps of breadcrumbs in the mixture.

    STEP 2: Heat a non-stick frying pan 20 cm in diameter and melt the lard in it over medium heat. If you have whole cheese, grate it finely.

    STEP 3: Pour the egg mixture into the heated pan in a thin layer. Using a circular motion of the pan, spread the mixture evenly over its entire bottom. Sprinkle grated cheese on the surface. Allow it to fry slowly until the omelette has set and the cheese on the surface has melted. This takes about 3–4 minutes.

    STEP 4: Carefully slide the omelette with a flat spatula, folding it in half when placed onto a plate.

    Serve the egg omelette immediately while the cheese is still warm; it tastes best that way. You can sprinkle the omelette with freshly ground chili flakes or pepper. Garnish the plate with colorful vegetables and green salad leaves. I always add a slice of buttered bread.

    • Don't turn the omelette! The egg mixture is poured into the pan in a thin layer to cook through without turning.
    • If you want a nutritiously more decadent dish, throw a spoonful of thinly sliced bacon strips into the pan and fry them. Only then, pour the egg mixture over the fried bacon.

      Fell in love with this omelette back when I first tried it in a café in Prague, have been scouring the internet for it since! Finally managed to find a good recipe that was exactly like the omelette I missed very dearly.
