Crack 2 eggs into a shallow bowl. Pour in 3 Tablespoons water, add 2 Tablespoons breadcrumbs and ¼ teaspoon salt. By hand, using a fork, beat well until completely combined. Be patient; there should be no lumps of breadcrumbs in the mixture.
Heat a non-stick frying pan 20 cm in diameter and melt 2 teaspoons pork lard in it over medium heat. If you have whole cheese, grate it finely.
Pour the egg mixture into the heated pan in a thin layer. Using a circular motion of the pan, spread the mixture evenly over the entire surface. Sprinkle ½ cup grated cheese over the surface. Allow it to fry over low heat until the omelette has set and the cheese on the surface has melted. This takes about 3–4 minutes.
Carefully lift the omelette with a flat spatula and fold it in half when placed on a plate.

SERVING: Serve the egg omelette immediately while the cheese is still warm; it tastes best that way. You can sprinkle the omelette with freshly ground chili flakes or pepper. Garnish the plate with colorful vegetables and green salad leaves. I always add a slice of buttered bread.
