If you cooked bread dumplings and still have some leftovers in your fridge, this easy Czech recipe is for you! Knedlíky s vejci, aka dumplings with eggs, are great for lunch, quick family dinner, or warm breakfast.

Bread dumplings, steamed or boiled, are a staple of Czech cuisine. They are served as a side dish to famous Czech sauces like Svíčková or Rajská. And where would traditional guláš be without dumplings!
If you wonder what to do with leftover dumplings, there is a simple answer: cut them into cubes, fry on butter in a pan, and crack some eggs over them. Stir for a while, and a delicious meal is done in no time.

Fair warning: Czech bread dumplings are so tasty that you usually have to cook an extra loaf to ensure you have leftovers for this dish.

- Bread dumplings leftovers; sliced and cubed into 1-inch pieces. Here's my recipe for yeast bread dumplings I used in this recipe.
- Whole eggs; added as the last ingredient in a pan.
- Unsalted butter; it’s excellent to use butter for the rich flavor of fried dumplings. Do not use vegetable oil if possible. Knedlíky fried in oil would not taste as great as on butter.
- Salt; to season the mixture, you can also add some ground pepper.
- A sprig of parsley; as a garnish for a nice green touch on a served meal.
Czech "knedlíky s vajíčky" are often served with pickled cucumber. Pickles are not displayed in the photo since it’s an optional ingredient.

STEP 1: Cube the slices of dumplings into 1-inch pieces.
STEP 2: In a pan, melt butter over medium heat. Throw in the dumplings and fry until golden. Stir occasionally so that the dumplings get a nice golden crust from all sides. (photo 1+2)

STEP 3: Add eggs, season with salt, and gently stir until creamy, do not overcook them. (photo 3+4) Set the pan aside and serve immediately.

Knedlíky s vajíčkem are served warm and often with dill pickles. Garnish the meal with a sprig of parsley if you have one.

- Finely chopped onion fried with cubed dumplings.
- You can add some diced bacon, speck, or deli sausages for a fancy finishing touch.
- Use potato dumplings instead of bread dumplings.

- 3 eggs
- ⅓ stick (40 g) unsalted butter
- salt
- green parsley to garnish
Instructions
- Cube the slices of dumplings into 1-inch pieces.
- In a pan, melt butter over medium heat. Throw in dumplings and fry until golden. Stir occasionally that the dumplings get a nice golden crust from all sides.
- Add eggs and gently stir in until creamy, do not overcook them. Set the pan aside and serve.
