If you have leftover bread dumplings in your fridge, this easy Czech recipe is perfect for you! Knedlíky s vejci, also known as dumplings with eggs, make a great lunch, a quick family dinner, or a warm breakfast.
In a pan, melt ⅓ stick unsalted butter over medium heat. Throw in dumplings and fry until golden. Stir occasionally that the dumplings get a nice golden crust from all sides.
Add 3 medium eggs, season with salt and gently stir in until creamy, do not overcook them. Set the pan aside and serve.
Notes
The basic recipe makes 2 yields.
"Knedlíky s vajíčkem" are served warm, commonly with pickles. Garnish the meal with some green parsley if you have one.

You can add some diced bacon, speck, or deli sausages for fancy.
