    Farmer's Cheese Spread

    This is a recipe for homemade chive spread made of farmer's cheese. Simple and delicious, it tastes best with fresh bread.

    Farmer's Cheese Spread

    The spread comes from the Czech Republic, where it is called "rozhuda". In the original recipe, tvaroh, fresh cheese with a lumpy texture, forms the primary ingredient.

    However, tvaroh is not easily available outside the Czech Republic. If you are based in the US, use farmer's cheese, the most convenient substitute.

    MY TIP: In the Czech language, a spread is called "pomazánka". Also, try this delicious garlic spread (it tastes divine!)

    Ingredients

    To make rozhuda, a Czech farmer's cheese spread, you'll need:

    • Farmer's cheese; in the Czech Republic, the tvaroh (or quark) cheese is traditionally used
    • Sour cream; with a fat content of around 15%. I don't recommend using light cream.
    • Unsalted butter; softened
    • Salt
    • Black pepper; ground
    • Chives; fresh, chopped

    TIP: Take out the butter from the refrigerator in time to come to room temperature and soften. Stiff butter will not mix well with cottage cheese.

    Instructions

    1. Chop the chives finely.
    2. Mix the softened butter with a bit of farmer's cheese and sour cream.
    3. Add the rest of the cream and farmer's cheese, then the chopped chives.
    4. Season with salt and pepper and mix by hand to form a spread.
    5. Spread on the bread and serve.

    Serving

    Rozhuda is an excellent cheese spread for bread, but also bagels or sandwiches. For a better effect, sprinkle the spread with extra chopped chives when serving.

    It serves as a healthy snack for children, tastes perfect as a dip for baked potatoes or peeled potatoes (Czech brambory na loupačku).

    Useful Tips

    • The more sour cream you add to the spread, the smoother and thinner it will be.
    • If you like onions, add about a tablespoon of finely chopped onions to the spread.
    • Some people also add a little sweet ground paprika for better flavor and color.
