This Czech recipe for homemade chive spread, made from farmer's cheese, is simple and delicious. It tastes best when spread on a slice of fresh bread.

- 10 ounces farmer´s cheese (in Czech Tvaroh cheese)
- 2 Tablespoons sour cream fat content about 15 %
- ½ Stick unsalted butter softened at room temperature
- 1 Tablespoon fresh chive finely chopped
- ½ teaspoon salt
- ⅛ teaspoon ground black pepper
Finely chop the chives to yield 1 Tablespoon fresh chive.
In a bowl, mix ½ Stick unsalted butter softened at room temperature with a portion of the farmer's cheese and sour cream.
Gradually add the remaining of 2 Tablespoons sour cream and 10 ounces farmer´s cheese, then stir in the chopped chives.
Season with ½ teaspoon salt and ⅛ teaspoon ground black pepper, mixing thoroughly by hand to create a smooth spread.
Serve by spreading it on slices of fresh bread.
- SERVING: This Rozhuda is an excellent cheese spread not only for bread but also for bagels and sandwiches.
- For a better visual effect, sprinkle the spread with extra chopped chives before serving.
- The more sour cream you add to the spread, the smoother and thinner it will be.
- If you like onions, add about a tablespoon of finely chopped onions to the spread.
- Some people also add a little sweet ground paprika for better flavor and color.
