    Cold Strawberry Soup Recipe

    This strawberry soup recipe is a perfect light meal for hot summer days. Made with fresh strawberries and milk, it particularly appeals to children.

    The original recipe comes from the Czech Republic, although you can prepare it anywhere in the world if you have fresh strawberries. 

    Cold strawberry soup belongs to the fond memories of my childhood.

    My grandma had a field full of strawberries, which we kids helped to weed and keep in good condition. In strawberry season, we were rewarded with this healthy dessert that granny made for us kids in a bowl. She sometimes added a little heavy cream to the milk, and the soup tasted even better. We loved this summer food!

    Strawberry soup, or strawberries with milk, is easy to make. You do not need a food processor or any other blender: just mash with a fork a handful of well-ripened strawberries in a bowl and pour sweetened milk over. Now, dig your spoon into strawberry chunks covered in milk and enjoy the taste of summer!

    Czechs call this soup: jahodová polévka (strawberry soup) or jahody s mlékem (milk with strawberries).

    For delicious strawberry soup, you need:

    • Strawberries; freshly picked, ripe, with hulls removed
    • Powdered sugar; for sweetening
    • Milk; for pouring. On warm summer days, use cold milk from the fridge.

    STEP 1: Drain and rinse the strawberries to remove any small bits of dirt or stones.

    STEP 2: Whisk the sugar in the milk.

    STEP 3: Put the strawberries on a plate and mash them gently until they release their juices. A great way to do this is to use a simple fork. Ripe strawberries are easy to mash and contain a lot of juice, which gives the soup a true strawberry flavor.

    STEP 4: Pour sweetened milk over, and serve immediately.

    ➜ How to enhance strawberry soup

    • Add some plain yogurt or vanilla yogurt to the milk. This will thicken the soup slightly. Another good choice is sour cream or Greek yogurt, which are higher in fat and therefore add more flavor to the soup.
    • Adjust the sugar amount according to the strawberries' sweetness and your taste preferences. Ripe fruit needs less sugar.
    • Add little chopped fresh mint leaves to the soup. Strawberries and mint, it goes together!

    One last thing and a good recommendation: Cold or chilled soup is very refreshing, however, for children, serve it rather warmed up to room temperature.
