    Cold Strawberry Sauce

    It's one of the easiest strawberry sauce recipes you'll ever make, requiring only three simple ingredients (plus a surprise addition). Whether you pour the sauce over dessert or scoops of vanilla ice cream in a bowl, this sweet topping will delight children and adults alike.

    Cold Strawberry Sauce

    The smooth sauce in this easy recipe is made with fresh strawberries. Neither cooked nor thickened in any way with corn starch. Using an immersion blender, strawberries are pureed, sweetened, and flavored the right way.

    For the homemade strawberry sauce you need:

    • Fresh strawberries; well-ripened, ideally picked up in strawberry season
    • Powdered white sugar; to sweeten the sauce
    • Fresh lemon juice; to enhance the flavor
    • Black pepper; freshly ground – my secret ingredient! This may be a surprising ingredient to some, but try adding pepper, even just to part of the sauce. Strawberry sauce with ground pepper gets a nice pungent undertone. For children, omit this ingredient.

    ➜ How do you make the sauce?

    STEP 1: Hull the strawberries, and discard the rotten ones. Rinse them, especially if they contain residual dirt or sand. Let the washed strawberries drain.

    STEP 2: Place the strawberries and sugar in a taller container. Using an immersion blender, blend them into a strawberry puree.

    MY TIP: Use a potato masher if you want the sauce to contain some strawberry chunks.

    STEP 3: Season the strawberry mixture with lemon juice and ground pepper. Stir and serve. Easy!

    Strawberry sauce is a great addition to ice cream, pancakes, homemade crepes, or waffles. Another good use is as a strawberry topping for panna cotta or cheesecake.

    The finished sauce tastes best at room temperature. This is the best way to enjoy its flavors.

    Store leftover strawberry sauce in the refrigerator in a lidded airtight container, where it will keep for about 3-5 days.

    ➜ Expert tips for success

    • If you would like to make a sauce from frozen strawberries, let the fruit thaw slightly beforehand. Frozen strawberries tend to be sourer than fresh ones, so you will probably need to add a little more sugar to make the sauce sweet enough.
    • To make the strawberry sauce smoother, add a little heavy cream, with a fat content above 30%. Beware, the sauce will be more liquid and is suitable as a topping for sweet fruit dumplings, for example.
    • Adjust the amount of sugar in the sauce to your taste. Ripe strawberries will call for less sugar, resulting in a healthier sauce.

    Last thing: If possible, use fresh strawberries rather than frozen ones. The best-looking and tasting sauce will be made with fresh fruit.
