Parsley potatoes are a popular side dish in European cuisine, particularly in Germany, Hungary, and the Czech Republic. They are delicious, easy to make, and undoubtedly among the best potato recipes!

Parsley potatoes are peeled potatoes cooked in salted water. Once boiled, they are topped with melted butter, lightly salted, and sprinkled with chopped fresh parsley. Just stir and serve as a tasty side dish.
These buttered potatoes are insanely simple, delicious, and go well with Schnitzel, roast chicken, meatballs, or fish. Try them; they are ready in a jiffy!

For the buttered parsley potatoes recipe, you will need:
- Potatoes; small waxier potatoes, e. g. Yukon gold is a good choice.
- Flat-leaf parsley; also known as Italian parsley
- Unsalted butter; to coat boiled potatoes. If you use salted butter, reduce the salt in the water you boil the potatoes in.
- Salt; to salt the water, plus more to taste the boiled potatoes

STEP 1: Peel the potatoes and cut them into equal-sized pieces about 1 1/2 inches (4 cm) in size.
STEP 2: Place the potatoes in a pot and cover them with water. Add one teaspoon of salt. The water level should be about 1 inch above the potatoes.
STEP 3: Bring the potatoes to a boil. Turn the heat down to low and let the potatoes cook gently, covered with a lid. It takes about 15 minutes until potatoes are done.
While the potatoes are cooking, rinse the parsley and chop it with a knife.
STEP 4: Check potatoes for doneness. If a piece of a potato can be cut with a knife smoothly, the potatoes are done.
STEP 5: Once cooked through, drain the potatoes.
STEP 6: Transfer the potatoes to a large bowl. Pour melted butter over them and sprinkle with chopped parsley. Season lightly with salt, just about 1/4 teaspoon. Carefully toss, and you're done!

➜ Do I need to peel the potatoes before cooking?
If you have new potatoes with delicate skin and want to save yourself the work, just wash their surface and boil them skinned.
However, if the potatoes have any blemishes, it is better to scrape them with a potato peeler. Furthermore, peeled potatoes soak up the flavor of butter better than potatoes with the skin on.
The boiling time for peeled and skinned potatoes is the same.
➜ How long does it take to boil potatoes?
The boiling time of the potatoes depends on their size. It is important that the potatoes are the same size for cooking evenly. Baby potatoes or potato chunks around 2 inches need about 15-20 minutes of gentle boiling.
➜ What is the best way to tell if boiled potatoes are done?
Take out one piece of potato and cut it with a knife. If the potato can be cut easily with only a little resistance, the potato is cooked just right.
Another proven method is to use a fork or wooden skewer. Pierce the potato. If the fork goes in and out of the potato without a problem, the potatoes are cooked.

- Do not use starchy potatoes. These tend to get overcooked a fall apart when boiled. Starchy potatoes are suitable for potato dumplings or pancakes (Czech bramboráky).
- Add mashed garlic and mix with the potatoes and parsley for a more intense flavor. Potatoes made in this way are an ideal accompaniment to grilled meat.

- 2 pounds potatoes yellow, a rather waxy variety, e. g. Yukon
- 1 Tablespoon unsalted butter
- 1 teaspoon salt plus to taste
- 2 Tablespoon flat-leaf parsley fresh, finely chopped
Instructions
- Peel 2 pounds potatoes and cut them into equal-sized pieces, about 1 ½ inches (4 cm) in size.
- Place the potatoes in a pot and cover them with water, ensuring the water level is about 1 inch (2.5 cm) above the potatoes. Add 1 teaspoon salt.
- Bring the potatoes to a boil. Reduce the heat to low and let them cook gently, covered with a lid. It takes about 15 minutes for the potatoes to be done.
- While the potatoes are cooking, rinse the parsley and chop it finely with a knife.
- Check the potatoes for doneness. They are ready if a piece can be cut smoothly with a knife.
- Once the potatoes are cooked through, drain them.
- Transfer the potatoes to a large bowl. Drizzle 1 Tablespoon unsalted butter, melted, over them and sprinkle with 2 Tablespoon flat-leaf parsley. Lightly season with about ¼ teaspoon of salt. Carefully toss, and you are done!
Notes
- The basic recipe makes 4 portions as a side dish.
- Avoid using starchy potatoes, as they tend to overcook and fall apart when boiled. In Czech cooking, starchy potatoes are more suitable for dishes like potato dumplings, Šišky, Škubánky or Bramboráky potato pancakes.
- For a more intense flavor, add some mashed garlic and mix it with the potatoes and parsley. Potatoes prepared this way are an ideal accompaniment to grilled meat.
- Italian, or flat-leaf parsley, is the best choice for these buttery potatoes. However, if you can only find curly parsley, feel free to use it without any problem.
