Join me in making Czech apple compote, spiced with cloves and cinnamon. Apple wedges stew in a sweet spiced liquid that you drink with the compote. Quick to make and best served warm.
Peel 5 medium apples and cut them in half. Cut out the cores and slice the apples into wedges of roughly equal size.
Place the apple wedges in a medium saucepan and pour in 3 cups water. Add ⅓ cup granulated sugar7 whole cloves, ¼ teaspoon ground cinnamon, and 4 slices lemon.
Bring to a boil, then lower the heat. Cover the pot and let the apples simmer gently for 10 to 15 minutes. The compote is done when a knife tip slides into a wedge easily, but the wedge still holds its shape.
Serve warm, lukewarm, or cold, always with a ladle of the spiced cooking liquid.
Notes
Apples: 1 medium apple weighs about 6.5 oz (180 g), so 5 medium apples are about 2 lbs (900 g).
Water: cover the apples fully for plenty of the drinkable spiced liquid, the Czech way. For a smaller, more intense compote, add just enough water to barely cover the apples and stir more often while they cook.
Cloves: remove them before serving, especially for children. A bitten clove tastes bitter.
Store: in an airtight container in the refrigerator, with the liquid, for 4 to 5 days.
